200 Monges Reserva is a wine made by the Real Vinícola Winery under the D.O. Rioja A coupage of Tempranillo (85%), Graciano (10%) and Garnacha (5%) varieties from old vineyards. The harvest is done manually, and the grapes are moved to the cellar in small boxes of 15 kg. of capacity, treating it with the utmost care so that no grain is broken.
A de-stemming is done before fermentation, which takes place in “Allier” wooden vats for 11 days at a temperature between 24 and 28º C. It is kept with the skins for 25 more days, which provides noble tannins that endow to the wine of a strong color that will last for a long time.
The aging is carried out for 24 months in new French and American oak barrels in a draft carved into the rock that keeps both temperature and humidity constant. After aging in the barrel, it rests in storage a few days before bottling, where it will be a minimum of 15-16 months in the bottle before going to market.
It is a high cherry red wine expression, garnet edge. Aroma of red fruits (cherry, raspberry). Very fine oak, coffee, chocolate. Powerful on the palate, spicy, tasty, complex, balanced, long and persistent.
A wonderful wine from La Rioja halfway between a modern elaboration combined with the classic barrel aging. It is advisable to decant it for at least 30-45 minutes.
Alcoholic graduation: 13.5% vol.
Service temperature: 16º C.
Pairing: Grilled meat, roasts, wild salmon.
