The Elyssia Pinot Noir cava integrates the true essence of the crop in Penedés, the typical variety of a cava that has worked so well in the cava region. The grapes come from the payment of the Mas Bernich estate, located in the municipality of Masquefa in Alto Penedés and give elegance and fruity sensations to the wine.
It has an aging of 18 months, enough aging to get the best out of it. An intense pink color, in the mouth it presents fruity sensations making it tasty and sweet, with a refreshing acidity and a long finish with very ripe fruit flavors. A cava that never fails will surprise your friends.
The vineyards are planted in the municipality of Masquefa, in the Alt Penedés within the DO Cava on sandy-clayey soils with short pruning to limit production and achieve more aromatic and structured grapes. Freixenet decided to do the night harvest to take advantage of the lower temperatures of the night and thus preserve the sensory characters of the grape.
Once the bunches arrived at the winery, the grapes made a maceration inside the pneumatic press for 5-6 hours to give color to the must before being pressed. At the end of this time, it was separated from its skins with a light pressing and transferred to stainless steel tanks with temperature control. By means of a static racking, it was clarified before sowing selected own yeasts and starting the winemaking process. The base wine obtained was bottled, and after the addition of yeasts and sugars, it was allowed to breed at the rest of its cellars for a minimum of 10 months in rhyme.
